French for staircase, L’Escalier leads you to a culinary experience extraordinaire. The Breakers award-winning restaurant transforms haute cuisine into a memorable and modern French dining event. Passionately dedicated to his craft, Chef de Cuisine Greg Vassos has introduced a new approach to food preparation that blends artful technique with science to produce the perfect balance of flavor and taste.

After a very successful season, L'Escalier will be closed for the summer and will re-open for the Palm Beach season on October 19, 2010.  Chef de Cuisine Greg Vassos will be developing a spectacular new menu and we look forward to welcoming you back in the fall for a dining experience unlike any other.

“My mission is for every single guest to savor a dining experience unlike any other,” says the internationally trained Vassos. Starting with the freshest seasonal ingredients – including vegetables and herbs from The Breakers own organic garden – he creatively interprets the illustrious traditions of the French kitchen into enticing combinations that tempt the palate and please the eye.

Vassos is part of a talented trio that includes The Breakers two Master Sommeliers, Juan Gomez and Wine Director Virginia Phillip. From savory appetizers to sumptuous desserts, they can suggest the perfect vintage to complement every dish. L’Escalier’s dedicated and gracious service staff knows every detail of food preparation and can guide your selections from the à la carte and prix fixe tasting menus.

Soft lighting, curved banquette-style sofas and crystal and silver settings create a seductive ambiance of exquisite elegance.  The Breakers signature restaurant, L’Escalier is the recipient of the coveted AAA Five Diamond Award and also received Wine Spectator’s highest honor, its Grand Award, every year since its inception in 1981.
