Biography

As Executive Chef of Restaurants at The Breakers Palm Beach (located in Palm Beach, FL), Anthony Sicignano leads the culinary vision for the iconic oceanfront resort’s 10 distinctive dining establishments, overseeing a team of 150 professionals. From stylishly sophisticated to casual beachfront fare, he ensures each venue delivers an extraordinary experience through innovative menus, top-tier ingredients and impeccable presentations. 

In his role, Chef Sicignano is responsible for concept development and execution, as well as product sourcing and procurement for more than 350 meticulously crafted dishes. He prioritizes locally sourced seafood and farm-fresh produce alongside premium ingredients from around the world. Under his direction, The Breakers’ restaurants are recognized for their crave-worthy, nostalgic-yet-innovative cuisine, drawing visitors from near and far.  

A Breakers veteran since 1993, Chef has held various guest-facing and behind-the-scenes positions including Restaurant Chef, Banquet Chef, Executive Sous Chef and Assistant Director of Banquet Operations. He was promoted to Executive Chef of Restaurants in 2002.

Beyond his epicurean creativity, Chef Sicignano drives operational excellence, ensuring streamlined kitchen management, financial efficiency and some of the highest food & beverage margins in the luxury hospitality industry.

A Long Island native, his passion for cooking began at age 14 in his family’s restaurants. He later earned an Associate Degree in Culinary Arts from the Culinary Institute of America and honed his craft at the legendary Waldorf Astoria in New York City, as well as acclaimed restaurants in East Hampton and Long Island. Recognized as a Distinguished Visiting Chef by Johnson & Wales University, Chef Sicignano remains committed to mentorship, actively supporting the CIA’s externship program and serving on the Forest Hills High School Advisory Board.
